Seared Salmon with Citrus
High heat for crisp skin, then a fast citrus butter in the same pan. Keep the center blushing for the best texture.

Ingredients
- 2 salmon fillets (6 oz / 170 g each), skin on
- 1 tbsp olive oil
- 1 tbsp unsalted butter
- 1 orange, juiced and zested
- 0.5 lemon, juiced
- 1 tsp honey
- 1 garlic clove, minced
- Salt and black pepper
- Fresh dill or chives for garnish
Steps
- Pat salmon dry and season generously with salt and pepper.
- Heat olive oil in a skillet over medium-high. Place salmon skin-side down and cook undisturbed 4–5 minutes until skin is crisp.
- Flip and cook 2–4 minutes more until just opaque in the center. Transfer to plates.
- Lower heat; add butter, garlic, citrus juices, zest, and honey. Simmer 30–60 seconds into a light glaze.
- Spoon the citrus butter over the salmon and finish with dill or chives.
